Sorry, I can't suggest an editing environment. XSL is complex. Perhaps you can just document the top five tags - xsl:stylesheet, xsl:template, xsl:apply-templates, xsl:value-of, xsl:copy-of ...provide an XML editor and leave them to it. Those tags do 90% of what you might expect from a non-dynamic 1:1 "form letter" template.
