Some further analysis which may be useful:

I note that brooklyn.incubator.apache.org resolves to: 192.87.106.229, 54.172.167.43, 2001:610:1:80bc:192:87:106:229

Most of the time, my computer/browser/OS/whatever is choosing the 192.87 address, which presents
the *.incubator.apache.org certificate, and connects with no problem.

However, if I modify my hosts file to force this hostname to resolve to the 54.172 address,
then I consistently get the *.apache.org certificate instead of *.incubator.apache.org.
