There should be no need to override SERVER_NAME and HTTP_HOST.
You can set the "ServerName" directive for a vhost to be 
anything, so long as it resolves back to the IP address of
the vhost.  E.g. instead of

  ServerName web2-real.syseng.uk.uu.net

why not say

  ServerName web2.syseng.uk.uu.net

or whatever "public" name you like.  Also, the "HTTP_HOST"
variable is precisely whatever the browser puts in its "Host:"
header, so by definition it's the "public" name of the web
server.

It's a Good Idea not to allow people to mess with variables
which our documentation states will always be a certain 
thing.
