There's no formal documentation, but you can see some examples here:
	https://github.com/apache/trafficserver/tree/master/plugins/experimental/lua/examples

These examples cover all the functionality that is currently supported. For your use case,
we would need to add support for transformations, which we don't currently have. I'm slowly
working on improving the Lua plugin, but I'd be very happy to help if you were interested
in enhancing it.
