Of course you can (think about blade servers).

Now you're confusing graphical display with encoding.  The term "headless" is concerned with
the ability to display graphical information, not render it.  JVMs running in headless mode
can render glyphs, graphs, or what have you, but must send the resulting bit maps to some
graphics server to have it displayed (it can also be saved in files if needed).
