I just tried adding:

<Logger className="org.apache.catalina.valves.AccessLogValve"/>

to the server.xml file, right under the:

<Logger className="org.apache.catalina.logger.FileLogger"
              prefix="catalina_log." suffix=".txt"
              timestamp="true"/>

But it gives me this exception:
