Just have the following in the context of your webapp  (in server.xml)
: 
 <Valve className="org.apache.catalina.valves.AccessLogValve" 
        resolveHosts="true" 
        directory="C:/logdir/"  
        prefix="access_log." 
        suffix=".txt" 
        pattern="common"/>
