I haven't done anything with iText, but from the FAQ on their site it looks
like you can do something like this:

	response.setContentType( "application/pdf" );
	OutputStream out = response.getOutputStream();
	generate_pdf( out );
	out.close();

The specific FAQ entry talks about errors with the IE plugin.
