I wouldn't like to do exactly that (albeit it crossed my mind a couple
times). I would prefer to have a single instance because I intend to do that
on a internal development server hosting a dozen+ sites and having a dozen
instances of tomcat running at the same time is kind of scary ;-)

How did you do that? I hope you didn't have to copy the entire
jakarta-tomcat tree (it's the easiest solution by far). I was thinking on
having separate batches to start up separate servers, but I haven't
dedicated much of my brains to this specific task.

I have accomplished this by running two instances of Tomcat.  That involves
changing the port values in two places within the server.xml of each tomcat
instance.  If this is an acceptable solution for you, I can provide more
