man Mail::SpamAssassin::Conf  says:

	header SYMBOLIC_TEST_NAME header op /pattern/modifiers [if-unset: STRING]
		"header" is the name of a mail header, such as 'Subject', 'To', etc.
		There are several special pseudo-headers that can be
