It seems pretty clear what is happening. In your "test" above you did the right thing, calling spamc with -u and of course it worked correctly. Now, when you are calling it via postfiix you are no longer sending the correct address to spamc, either by not using the -u command line param at all or just simply sending spam as the username. Fix how you are calling spamc and all will be well.
