Now that we have an indirection between the column name and the column qualifier through column
encoding, we should be able to support modifying existing columns too. For example, to change
a data type, you'd need to:
- create a new column of the new type
- run an async MR job to convert from old to new type
- upon successful completion, removing the old column and rename the existing one
