How about using your words

"you can click over the white box where the word "Table" is, and edit that word to create
another category."

or "edit the text in the box"

On the menu shown on the last screenshot, you can click over the white box
where the word "Table" is, and edit that word to create another category.
Because of my limited English (I'm a native Spanish speaker), you'll find
several phrases on the Guide where a better wording is clearly possible and
welcomed :)
