If you wanted to have all your varchar columns be specified as  
"varchar(SIZE) COLLATE French_CI_AS", you could specify the property:

    openjpa.jdbc.DBDictionary: VarcharTypeName="varchar{0} COLLATE  
French_CI_AS"
