Normally the Currency is set by the product store.
however if you want a finer grain
best place to find out is looking at the entity definitions or use the
webtools.

if you drill down through one of the currencies.
like

it has a postal Address

that is connected to

so you can write and SCA that will fire on each service that creates or
updates the Address and change the Currency.
