It's true that all is not documented. But in most of the case after having played some times
with OFBiz you are able to deduce from
code (would it be java, xml, groovy, ftl, css, bsh, etc.)
For instance for your specific question I looked for actualEndingGc in all java files and
found this snippet in

double cashEnd = state.getDouble("actualEndingCash").doubleValue();
double checkEnd = state.getDouble("actualEndingCheck").doubleValue();
double ccEnd = state.getDouble("actualEndingCc").doubleValue();
double gcEnd = state.getDouble("actualEndingGc").doubleValue();
double othEnd = state.getDouble("actualEndingOther").doubleValue();

>From there I was able to deduce that this field is used to store the actual value related
to Gift Certificates used so far in this
session (or something like that)

Remember this is open source done by volunteers. If you need more documentation and think
