How about:

   <plugin>
     <groupId>org.apache.maven.plugins</groupId>
     <artifactId>maven-ear-plugin</artifactId>
     <configuration>
       <archive>
         <manifestEntries>
           <Build-Version>${version}</Build-Version>
         </manifestEntries>
       </archive>
     </configuration>
   </plugin>

And then:

mvn -Dversion=10.2.0.0 install
