I got the solution to work - thanks so much

I added the below to solrconfig.xml

<updateRequestProcessorChain name="html-strip-features">
                                <processor class="solr.HTMLStripFieldUpdateProcessorFactory">
                                                <str name="fieldName">health_content_t</str>
                                </processor>
                                <processor class="solr.LogUpdateProcessorFactory" />
                                <processor class="solr.RunUpdateProcessorFactory" />
</updateRequestProcessorChain>

<requestHandler name="/update" class="solr.UpdateRequestHandler">
                                <lst name="defaults">
                                                <str name="update.chain">html-strip-features</str>
                                </lst>
</requestHandler>
