With the current TimestampExtractor, the input record is in the form of {{ConsumerRecord}}
which contains the topic name, hence could users use different extracting logic based on the
topic name in their instantiated {{TimestampExtractor}}?

 That means you can only have a single timestamp extractor per app, even though you may be
joining multiple streams/tables that require different timestamp extraction methods.
