When you run your script the cookie manager is what saves and resends the cookie your server sets(the proxy doesnt come into play once you have recorded the script) . From the name of your cookie I'd guess that it is being set by Javascript - Since Jmeter doesnt execute javascript , you'd have to change your script to add the cookie yourself.
