Based on the definition for nt:unstructured (
http://wiki.apache.org/jackrabbit/nt%3aunstructured),

[foo:i8nResource] > nt:resource
- jcr:language     (STRING)
- * (UNDEFINED)
- * (UNDEFINED) multiple

should do the trick.
