You can find the JCR-RMI javadocs at
http://jackrabbit.apache.org/api-1/jcr-rmi/, though that address
hasn't yet been linked to the main Jackrabbit site.

See especially http://jackrabbit.apache.org/api-1/jcr-rmi/org/apache/jackrabbit/rmi/server/package-summary.html#package_description
for instructions on setting up a RMI server. The easy way to do that
is to use the jackrabbit-server web application and uncomment the RMI
entries in the deployment descriptor. That way the webapp
automatically exposes the repository as an RMI service in addition to
the default WebDAV services.
