ALG: This is expected behaviour (or I may misunderstand the description). With

select drawing => Create 3 symbols using symbol in "Symbol Shapes",
"Callouts","Stars" => Select one of the created symbols =>Click on edit style
=> Select Area tab => Select a color

You have changed the color for the shapes as defined in the style; all three
shapes should get that color since they have no hard-set fill color yet but
derive it from the style (the default)


Right click on the same symbol=>Select
"Area" menu item => Choose a different color(As a result it applies color to
only selected symbol)

You set a color to the single selected object as a hard attribute. Hard
attributes (atributes directly applied to the object, not a style) win over
style attributes, so the single shape will get the new color, the others will
not change


Select EditStyle from the context menu =>Select a
different color => It applies color to the symbols other than the selected

You change the color in the style used by all three shapes; for the two
unchanged which have no hard color attribute the color will change; for the one
with the hard color attribute the hard color attribute will still win over the
style settings -> it will not change.

To delete hard attributes from objects (maybe the step you are missing), select
these and choose format/default_formatting from the menu. Doing this with the
changed shape will make it use the color from the style again.
