My votes for 3.0:

1. Haddock (fish-n-chips FTW!)

for 3.1:

1. Albacore (sushi FTW!)

Scrod actually is sometimes haddock (though mostly cod), so it's not  
strictly speaking a species and does not qualify ;-)
