Look likes it is related to hardware, 
you might want to try turning off some advanced features which is introduced in Nehalem processor,
such as, turbo mode, constant/invariable-TSC.
Or you might want to try XenServer 6.0.2 which has xen 4.1 hypersivor which supports new processor
features, XenServer 5.6 SP is using xen 3.4.2.
