Im not that good a programmer to do so but it would be nice if mod-status
coul drefresh the screen every X seconds and maybe sort the output per vhost
... :)

would be nice to have such a tool, if you are a programmer you can try to
modify the mod_status code so you get the information in realtime and write
an application to parse and view it.

This apache.mrtg uses server-status to produce it's reports so maybe you
can customize it for your needs. Dunno.
