I'm using rotatelog tool on my debian.

if you have it on Mac OS X,  just had a file "apache" (for instance) in 
/etc/rotatelog.d/, with :

###########
/logs/myvhost_error_log {
         missingok
         copytruncate
         rotate 2
         monthly
         compress
}

/logs/myvhost_access_log {
         missingok
         copytruncate
         rotate 2
         monthly
         compress
}
###########

for each vhost.

you don't need transfert log directive un your httpd.conf (just custom log 
and error log)

this will rotate your logs every month, keeping 2 logs from previous 
months, and will compress the log.
