I've always looked at 
http://developer.apple.com/internet/macosx/modssl.html for instructions 
on how to create a self-signed certificate for Apache. These 
instructions work on Mac OS X (Apache 1.3.27 shipped from Apple) and 
Solaris (Apache 2.0.47 compiled from source code).
