Well, I was looking for a generic procedure for doing uninstalls rather than
depending on versions, but I'm upgrading OpenSSL 0.9.6d -> 0.9.7b

The other programs, like Apache+ModSSL, PHP, and MySQL, I've already got a
good grip on where their files and libraries are. I'm just not familiar with
what OpenSSL encompasses. I just installed a program called "installwatch"
that should log the install process, but I don't want to overwrite anything
accidentally.
