You don't need to "redo", just to add the new parts, as you would should you
decide to change the default docs directory, for instance.

What you provide at startup is just the very basics for Apache to start on a
"single-domain" basis.
VirtualHosting as you require should be done editing the HTTPD.CONF file
acording to the instructions.

You have (for example) :
 http://httpd.apache.org/docs-2.1/en/vhosts/name-based.html for version 2.1
and
http://httpd.apache.org/docs/vhosts/name-based.html for version 1.3

If that doesn't answer your problems, go about searching at
http://search.apache.org/
