Well you were on pretty much the right track.  You can try:

netstat -an | grep ":80" | grep ESTABLISHED | wc -l

But remember HTTP is stateless, so this isn't "logged in" users or 
anything like that.  It is just what it says, established connections to 
port 80 at the time you run the command.
