I don't really know anything about Tomcat.  But I can tell you that it is
NOT necessary (or even advisable) to use the hostname in the
<VirtualHost>.  I'm sure that mod_jk.conf is just an example that you can
modify to your choosing.  You should modify to match the virtual-hosting
example in the apache docs.
