The short answer is no.

The error_log is very free form, because it is a place where any
application can print error messages. Because the error messages are
arbitrary text, you are not really able to impose any sort of order on
them. The format that you do have is that each record contains the date
and the severity, followed by a free-form error message:

[Mon Aug 19 11:00:12 2002] [notice] SIGHUP received.  Attempting to
restart

What sort of changes to this are you interested in making? It is
possible to write custom log handlers.
