not a big deal at all.

just go to your default website properties on IIS and set it listen to port 81. Restart it,
and now IIS is on port 81

let apache run on port 80, by using the port directive, and viola, you have apache running
on port 80 ( optionally as a service also).

You might want to test them over 3-4 days or something.  I dunno, I think I heard a while
ago that apache initially will not be the most optimal ( still probably better than IIS) but
after running for a while, apache kick even more ass.

Haven't tried it, but I ran Apache 1.3 w/ IIS 5 a while ago, and
unless something is horribly wrong, it should work.

I'll even include a spoiler for you: Apache 2 will win. :)
