You should be able to do this with conditional logging.  Assuming
that your server's IP address is 1.2.3.4, something like this
should work:

SetEnvIf REMOTE_ADDR "^1\.2\.3\.4$" request_is_local=1
CustomLog logs/access_log combined env=!request_is_local

(untested)
