Whoops, yeah I forgot about the Alias directive.  That is a better solution
than the symlinks.  Plus it's cross-platform.  Go with that.

A solution is to use the Alias Directive

<VirtualHost xxx.xxx.xxx.xx>
ServerAdmin root@xxx.com
DocumentRoot /data/webmaster/websites/web1

Alias /images /data/webmaster/websites/images

ServerName www.web1.com
</VirtualHost>

then, in your HTML pages, when u write

<img src="/images/file.gif">

Apache will pick the file in /data/webmaster/websites/images
