Uh... you can't add encodings in mime.types. The problem was that gz
and tar were defined in both places, so you ended up with, say, for a
resource called foo.html.gz:

Content-type: application/x-gzip
Content-encoding: x-gzip

Where what you really wanted was:

Content-type: text/html
Content-encoding: x-gzip

Removing the extensions from mime.types fixes that.
