According to 10.3.5 the response must not / should not contain any entity headers (depending on the validator type). Furthermore 10.3.5 states that this should prevent inconsistencies between the cached entity body and the updated header. Content-type is an entity header and changing the Content-type clearly would create inconsistencies between the cached entity body and the updated header. So we are generous in what we acccept.
