One more snippet of info:

this "first chunk" missing thing only happens when there was an expired entry in
the cache beforehand. It does not happen after a fresh (re)start of apache.
I.e.

1) (re)start apache -> mem cache is empty
2) get (uncached) request -> the browser gets chunked, correct data
3) get (cached) request -> the browser gets unchunked, correct data
4) wait until content is expired
5) get (uncached) request -> the browser gets chunked, correct data
6) get (cached) request -> the browser gets unchunked, incorrect data
