The developers have a policy that if you want to lie or completely hide
the Server: header, you'll need to hack the code.  I tend to agree with
this.

As far as mod_status, I'd hazard a guess that if we were to make the change
you wanted, we'd soon get a bug report asking for it to be put back the way
it is.  And it certainly isn't worth making separately configurable.
