I'm looking at org.apache.http.client.fluent.Request.

Oh I see, it's modifying a map that was passed in from somewhere else, and that somewhere
else must still use the map.

I'm doing this and it's still encoding as latin-1 (the default) for me:

        Executor executor = Executor.newInstance();
        Request request = Request.Post("http://localhost");
        request.bodyString("t\u00e9st\u2200", null);
        System.out.println("'" + executor.execute(request).returnContent().asString() + "'");
