You simply have to do a

hbase> get 'tablename', 'rowkey', {COLUMN => 'colfam:oldqualifier'}
value
hbase> put 'tablename', 'rowkey', 'colfam:newqualifier', 'value'
hbase> deleteall 'tablename', 'rowkey', 'colfam:oldqualifier'

Do a hbase> help to get all the gory details.
