NFS server gets the IP used by the client to create the TCP/UDP connection. If export table
specifies hosts with  machine names, NFS does reverse lookup for the client IP and then tries
to match the machine name(s). 
Even a client has multiple IPs, my understanding is that only one IP is used by the client
for the NFS connection. Please let us know if it answers your question.
