Subject RegexExtractorInterceptorMillisSerializer to convert from millsecond timestamp to date

Is anyone using RegexExtractorInterceptorMillisSerializer to convert from
millsecond timestamp in an event to a full date as an event header?

My suspicion is its only possible to currently convert from patterns
matching YYYY-MM-DD HH:MM:SS,sss TZ to an epoch, and not the other way
around

We actually want to extract several headers from an epoch (YYYY, MM, DD)
and use them independently as part of the key in an S3 URI , im guessing we
are looking at a custom serializer.

Appreciate the suppor and any thoughts on this
