I did some more testing on an iPad 3 (240 DPI) w/ IOS 6 and the results are the following:

| Email  |  89 | 29 |  18 | n/a | 27 |

The results are the same with iPad 2 (120 DPI).
I didn't test other devices 

What it shows is that common UI items are roughly 75% of the "reference" size, which is exactly 120/160.
