I agree with Kim that it is very common in software companies to refer
to what they sell as products. I think that technically, Derby is a
product, even though it is not "sold".

Apache refers to Derby as a "project".

To avoid any confusion, perhaps the title should be just "Derby
Documentation" without a qualifer at all.
