hostName is defaulted to 'localhost', but can be set with RunTest/RunSuite
to enable testing with the networkserver on another machine. This is
required for, for instance, IPV6 machine testing.
derbyTesting.serverhost and derbyTesting.clienthost are only relevant
because they are used in the derby_tests.policy file - they're *not* used
anywhere else.
(So the test harness sets derbyTesting.serverhost if hostName has been set
explicitly, otherwise it's always 'localhost').

I'll try to catch up on what is being mentioned in this discussion and join
