I wanted to say thanks and that those articles definitely helped me with a POC I was working
on.  Ultimately, I ended up using
the most.
I'm still not sure if I got everything correct, but it's good enough for now.

If I understand you correctly, you want to implement Java client speaking with MSCRM 2011
endpoint using SAML based authentication (SAML includes claims).
If it so, I would recommend to start from Glen Mazza's blog and tutorial about using CXF and
STS for SAML based authentication:
After it you can configure your claims in CXF client and STS (Colm's blog
