For the sake of the sanity the simplest solution is to configure the generator to generate
Response return type for a given method. Those who view WADL will see all the information
and the client code would simply have to do  Response.readEntity(MyClassV1.class), Response.readEntity(MyClassV2.class).
Can you open a minor enhancement request to have multiple methods generated for multiple response
representations ?
I won;t be able to prioritize on that issue but might be worth looking at...
