CTAKES-297 - DictionaryLookupAnnotatorUMLS.xml still had a Lucene impl config.  Updating to
use default jdbc (hsqldb).
CTAKES-121 - We no longer need to copy resources for most of the projects now, can be read
directly from the jars.
